In this study, the effects of separate addition of two hydrocolloids carboxy methyl cellulose (CMC) and hydroxyl propylmethyl cellulose (HPMC) at 0.1, 0.3 and 0.5% levels with two flours made from two native wheat varieties (Sardary and Sorkheh) in Khorasan provience were studied. Chemical (including moisture content, ash, protein, wet gluten and pH) and rheological tests were performed on both flour and after preparing bread, stale test was performed (immediately after baking, 24 hours and 48 hours after baking).Methods: Present study is on Taftoon bread. The obtained data evaluated in basis of split plots experiment in a complete random design and by using the Duncan's multiple range tests, and the average of  replicates were compared at statistical level of 1% (a=0.01).Results: The results indicated that, the CMC and HPMC gums enhanced mixing tolerance and raising dough resistance of their resulting dough’s, but anti-staling and improving properties of HPMC was better than CMC. In addition to, while Sardary flour didn't show appropriate baking quality, the Sorkheh flour exhibited good baking quality (due to high protein and wet-gluten).Conclusion:According to the findings of this study, it is suggested that CMC and HPMC gums at a level of 0.5% for Sardary flour and 0.3% for Sorkheh flour to improve the quality of the resulting breads and delay staleness.}, keywords = {Dough rheology,Flat Bread,Taftoon,Hydrocolloids}, title_fa = {بررسی اثر برخی هیدروکلوئیدها بر کیفیت نان تافتون}, abstract_fa = {مقدمه: در سال‌های اخیر ضایعات نان افزایش داشته است که از دلایل آن می‌توان به کیفیت نامناسب آردهای موجود در کشور و پدیده بیاتی نان اشاره کرد. در این پژوهش اثر دو صمغ کربوکسی متیل سلولز (CMC) و هیدروکسی پروپیل متیل سلولز (HPMC) در سه سطح مقداری 1/0، 3/0 و 5/0% روی دو نوع آرد تهیه شده از دو رقم گندم سرداری و سرخه کشت شده در استان خراسان مورد بررسی قرار گرفت. آزمایشات شیمیایی (شامل مقدار رطوبت، خاکستر، پروتئین، گلوتن مرطوب و pH) و رئولوژیکی روی دو نوع آرد تهیه شده صورت گرفت و پس از تهیه نان، آزمایش بیاتی (بلافاصله پس از پخت، 24 ساعت و 48 ساعت پس از پخت) نیز انجام گردید.روش‌ها: این تحقیق روی نان تافتون است. نتایج حاصل براساس آزمایش‌های اسپلیت پلات در قالب طرح کاملاً‌ تصادفی مورد ارزیابی قرار گرفت و جهت مقایسه میانگین‌ها از آزمون دانکن در سطح آماری یک درصد (01/0=α) استفاده گردید.نتایج: نتایج نشان داد که هر دو صمغ HPMC و CMC بر ضریب تحمل خمیر و مقاومت خمیر اثر قابل ملاحظه‌ای و مثبت دارد. همچنین این دو هیدروکلوئید در به‌تعویق انداختن بیاتی نان نقش دارند بطوریکه HPMC از CMC کارآمدتر عمل می‌نماید. به‌علاوه، نتایج این آزمون نشان می‌دهد که آرد سرداری از کیفیت نانوایی مناسبی برخوردار نیست اما آرد سرخه کیفیت نانوایی خوبی (به‌دلیل پروتئین و گلوتن مرطوب بالا) دارد.نتیجه‌گیری: با توجه به یافته‌های این پژوهش پیشنهاد می‌شود صمغ‌های CMC و HPMC در سطح مقداری 5/0‌% برای آرد سرداری و 3/0‌% برای آرد سرخه جهت بهبود کیفیت نان‌های حاصله و به‌تعویق انداختن بیاتی استفاده شود.}, keywords_fa = {رئولوژی خمیر,نان مسطح,تافتون,هیدروکلوئید}, url = {https://jh-per.halal.ac.ir/article_152973.html}, eprint = {https://jh-per.halal.ac.ir/article_152973_fdf2461f46fa7f367c147d0ee94df806.pdf} }
