Investigating the amount of nutrient compounds and amino acids in plant sources for food enrichment

Abstract

Background and purpose: In the present century, considering the uneven increase of human population and the limited growth of animal resources, it has naturally led to the imbalance of the supply and demand system , the discussion of protein shortage, especially in developing societies, and as a result , the rapid increase in the price of animal proteins .It has become more intense. Animal sources are able to provide only 30% of the protein needs of people on earth , and nearly 70% of this need must be met through plant products.
Materials and Methods: In this overview study, international databases of ((springer)) and scientific research search engine ((google scholar )) was examined.
Findings: currently, the proteins obtained from the waste of fruits and vegetables, especially their kernels, are used as a substitute for protein sources to enrich food due to their characteristics.
Conclusion: Therefore, the quality of protein and the evaluation of the food used in food and nutrition planning are necessary to meet the biological needs of humans .On the other hand, the food production process affects the pattern of essential amino acid availability and finally the product protein quality.
