مقایسه غلظت برخی از مواد مضردر گوشت آبزیان حلال و حرام گوشت

چکیده

مقدمه: پژوهش حاضر با هدف بررسی تطابق حلیت فقهی مصرف تعدادی از گونه‌های آبزیان با غلظت برخی از مواد مضر (شامل هیستامین، اوره، متانول) در گوشت آنها به انجام رسید.
روش‌ها: نمونه‌برداری از گونه‌های Arius maculatus (حرام)، Atule mate (حلال)، Cynoglossus bilineatus(حلال)، Planiliza macrolepis(حلال)، Portunus pelagicus(حرام)، Rhinoptera javanica(حرام)، Saccostrea cuccullata(حرام)، Sphyraena putnamae (حلال) در خلیج چابهار به انجام رسید. از روش آلایزا (ELISA) برای سنجش میزان پروتئین کل، هیستامین و اوره در بافت عضله ناحیه پشتی گونه‌های ماهیان، عضله اندام حرکتی Portunus pelagicus و بافت نرم Saccostrea cuccullata و از کیت رنگ سنجی برای اندازه‌گیری متانول بافتی استفاده شد.
نتایج: مقایسه میانگین غلظت اوره بافتی در گونه‌های حرام گوشت و حلال گوشت مؤید بالاتر بودن غلظت اوره در آبزیان حرام گوشت بود (W= 167.5 ,p= 0.013). میانگین غلظت هیستامین میان دو گروه کلی آبزیان حرام و حلال گوشت معنی‌دار نبود (F= 2.61, p= 0.11) ولیکن به نظر می‌رسد شدت افزایش غلظت این ماده در گوشت سرخ شده آبزیان حرام گوشت بیشتر از گونه حلال گوشت است. همچنین میزان کاهش پروتئین در گوشت پخته  R. javanica قابل‌ ملاحظه بود. مقادیر ماده متانول در گونه‌های مورد آزمون کمتر از حد تشخیص بود.
نتیجه‌گیری: به نظر می‌رسد که انطباق حلیت/حرمت فقهی آبزیان با غلظت مواد سمی در گوشت پخته شده (و نه گوشت خام) نتایج دقیق‌تری در سنجش میزان تطابق ارائه خواهد داد.

Introduction: The aim of the current study was to assess the agreement of the religious halal norm with difference in histamine, urea, and methanol levels as well of selected aquatic animal species.
Methods: Samples of Arius maculatus, Atule mate, Cynoglossus bilineatus, Planiliza macrolepis, Portunus pelagicus, Rhinoptera javanica, Saccostrea cuccullata, and Sphyraena putnamae were obtained from the Chabahar Bay. The concentrations of total protein, histamine, and urea were estimated in dorsal muscle of fish, claw muscle of Portunus pelagicus, and soft tissue of the Sccostrea cuccullata samples, using the ELIZA method. Colorimetric kits were used for methanol determination.
Results: Comparison of the mean urea concentrations amongst examined species indicated significantly higher levels of urea in haram species (W= 167.5, p= 0.013). Mean histamine levels on the other hand, were not significantly different between halal and haram food (F= 2.61, p= 0.11). Yet, histamine content in R. javanica fried flesh was more elevated compared to halal food. Also Protein levels were considerably decreased in cooked R. javanica meat. Methanol concentration was lower than the detection limit in all samples.
Conclusion: We speculated that the cooked food should be considered for assessing the agreement level between halal norm with food quality. Colorimetric kit was used to detect methanol in samples.
